Cranberry Scones

Mmmmmm, Amber and I made cranberry scones! We took a recipe we found and modified it a bit, mostly by not adding any sugar.

Cranberry Scones
2/3 C. buttermilk
1 egg
3 C. flour
4 t. baking powder
1/2 t. baking soda
1/2 t. salt
1/2 C. butter
1 C. dried cranberries
1 t. fresh grated orange peel
A little milk for brushing

Preheat oven to 375°F.

Beat egg into buttermilk. Sift together flour, baking powder, soda and salt into a large bowl. Cut in butter. (We didn't have a pastry cutter so we cut the butter in chunks then used our fingers to mash the butter into the flour.) Add cranberries and orange peel. Toss to coat. Add buttermilk mixture. Stir with a fork until a soft dough forms.

Turn out onto a floured board and knead it 5 or 6 turns. Form dough into a ball and roll it out. Use the top of a glass or other circle-shaped object to cut out the scones. Place on cookie sheet. Brush the scones with a little milk.

Bake for 20 - 25 minutes or until a light golden brown. Cover with a clean linen as they cool so they don't dry out.
