What he has drawn here is more like a taco salad, where they fry up a flour tortilla in a shell form and fill it with stuff.

note that the burritos do not have yellow cheesse in mexico, they use white cheese, also tacos are usually made of softtortilla, when it's a "hard shell" it's because the tortilla has been fried...
tostadas are very different in mexico from textmex restaurants (flat as one said)

quesadillas are very different in the center/south of mexico than in the northern states, in the northern states they usually only put white cheese and maybe guacamole, on the southern states they make quesadillas with mushrooms, pumpkin flower, huitlacoche, and other fillers...

The tostada shown is actually a taco salad; a real tostada is flat.

Real tacos are soft. Hard tacos are an American invention. Tasty, not "genuine."

This guide doesn't include taquitos which are meat wrapped in tortilla and fried so the tortilla is hard (usually about 8 inches long and 3/4 inch in diameter) and churros which are long thin pieces of dough rolled in cinnamon sugar (the "dessert" crud at Taco Bell is sort of a fake churro; real churros are much thicker and not very crisp).

Carnitas, my mother's specialty, is a particular preparation of meat that can be eaten as a filling. It's braised pork, very stringy and delicious.

From a Mexican who loves Mexican food. Yes, many of you have it right, many have it wrong. So here it goes:
1. Tortillas: in Mexico hard shell tortillas don't exist, except the flat ones for Tostadas. We have corn tortillas (for tacos, enchiladas, chilaquiles and some kinds of quesadillas) and wheat tortillas (for burritos and a few other dishes like "Gringas"). Other dishes like sopes, deep fried quesadillas, tlacoyos, chalupas, etc are made with corn "masa" or dough, usually molded by hand.
2. Quesadilla: strictly, a "quesadilla" is filled with "queso" or cheese. This is how it's made in many states in Mexico. In Mexico City and other places nearby, quesadillas are filled with many other things like mushrooms, Tinga, potato, hot chilies with cheese, etc. Quesadillas can be deepfried or simply grilled on a comal (big flat metallic dish to warm tortillas and cook things like quesadillas and sopes).
3. Cheese: although yellow cheese does exist in Mexico, we use it for burgers not Mexican food. We don't use Cheddar either. These are some names of the kinds of cheese we use in our food: Manchego, Oaxaca (string cheese), Añejo, Fresco (these two to sprinkle on top of dishes), Panela, Chihuahua.
4. Taco salad: doesn't exist in Mexico.
5. Chili: love it, but it's not a Mexican dish, it's Tex-Mex.Thought I should add that.
6. Salsa: we make more than 50 different salsas (a lot more, actually). That I know of, no salsa is made with Jalapeño peppers. We use chilies like: Serrano, de Arbol, Pasilla, Habanero.
7. Fillings: depending on the state, fillings are very different (pork, fish, shrimp, chicken, vegetables, etc.) But we never make the following "taco": ground beef, lettuce, tomato, yellow cheese, sour cream and salsa inside a hard shell tortilla. I know many are used to this and love it. That's okay, just know that you won't find it in Mexico and can't really be called authentic.
8. Names of dishes: some places like Taco Bell use names of dishes we do make, but they are quite different from the original. Be aware of this when you visit Mexico and order a "chalupa" for example. You will be served something very different, but yummy, believe me.
Sorry for the long comment. I hope you visit Mexico and sample our authentic food (go to restaurants visited by locals, don't settle for the hotel's food).
