Pear-Rhubarb-Cranberry compote

    I'll be giving these away for Christmas presents :)

    The recipe:
    1 kg pears
    750 g rhubarb
    250 g cranberries
    1 tsp cinnamon
    1 handfull raisins
    agave syrup or honey to taste

      Do I need to cook the ingredients before pouring into the jars?

      yep, you do! you cook the ingredients, first on high and then turn the heat down an let simmer. in the mean time you put some sterilized jars ready.
      turn the heat up again until the fruits are boiling, fill the jars while the mixture is very hot. screw the lids on immediatly and then turn the jars upside down and place them on a cooling rack. as they cool down the lids of the pots should 'click' so that the pots are closed air-tight. when you google 'making preserves without canner' you can find more info on this process.

      I was wondering how you got the smooth consistency? Did you blend the mixture or did the fruit just break down afterwards?
