[...] unable to pick a restaurant from among hundreds [...] a perfect archetype of freshness, porcelain, bamboo and served not sushi but kaiseki, the original inspiration for the famed El Bulli restaurant we keep meaning to visit and [...] at least seven master chefs performing my meal in front of me, sharpening knives, answering questions, occasionally holding a gastronomic Japanese-English encyclopedic dictionary to help explain [...] In Tokyo I accidentally stumbled onto the Kyoto restaurant's sister establishment, also while looking for a sushiya, but this time I didn't have three hours and thirteen thousand yen [...] what I don't yet realize is that this edifying and sublime culinary experience will wind up having implications for the future of my flickr profile [...]
