We also made a classic Inari-zushi in lab today. It is essentially sesame sushi rice (sweet vinegared rice) wrapped up in ''abura-age''fried tofu skin stewed in a dashi broth. Well-flavored, these are eaten as-is - soy sauce would really push it over the edge.

Inari are the Japanese fox spirits who supposedly love these fried tofu skins, hence the name. The Western Japanese Kansai region (including my hometown of Osaka) make them in a triangle-shape as in the picture. The Eastern Tokyo-ites make them rectangular - those uncouth heathens ;D .

Simple, light and yummy. I made and ate like 5 of these.
