2006 Gewurztraminer Fermentation Chart
![]() This chart is tracking the progress of my 2006 Gewurztraminer Fermentation. It will be updated every couple of days until fermentation is complete.
The red (sugar) and orange (temp) lines are tracking 45L of juice fermenting with R2 yeast. The blue (sugar) and light-blue (temp) lines are tracking 15L of juice fermenting with BA11 yeast. Unfortunately my notes are not nearly as organized, just scribbled into my notebook. I too have tried the Buon Vino SuperJet filtration system with similar results, excellent polishing, some reduction of off odors, but not completely eliminating them. I found the quality of the grapes was the biggest variable in generating off odors, the grapes I grew in the backyard, not perfectly ripened had more off odors than the grapes I purchased from a Livermore grower. We'll see how this year’s batch turns out.
