To further free up counter space we ditched the knife block and fit everything sharp (I tend to cut myself reaching into drawers) on one Ikea Grundtal magnetic knife strip.

Liz - I don't love using the magnet strip but I have so little counter space that I don't mind it. I just have to be careful not to cut myself while pulling a knife off. If I had room I'd love to use something like this knife block that Courtney S made for herself (inspired by Martin Robitsch).

We had this for a while but went back to a knife block. One thing to be aware of: When you lift a knife from the rack, lift the sharp edge first and then lift toward the back of the blade. The magnet will hold the thicker part of the knife more than the thin blade. Rolling the knife toward the blade will eventually give you a duller section on your blade. I think that could be prevented if there was a plastic coating on the magnetic bar, but I haven't found one that has that.
But your kitchen is so incredibly organized. I love it.

I 've had one of these for at least fifteen years. My kitchen is small and it gets the knives off the counter, out of the way where you can see what you have and which knife you want to use.
