NSL's house special fried rice.
1 clove of garlic (or two...)
1/4 onion
1 green onion
2 eggs
1 hotdog (the more mystery the better)
6 shrimps
1 banana pepper
1 tomato
6-8 string beans
cabbage (thinly sliced)
1 small organic / pickle cucumber
soy sauce
sweet soy sauce
fish sauce
black pepper
white pepper
sea salt
sambal oelek (sriracha or any fav hot sauce)
Last but not least SPAM!
Chop the garlic, green onion and onion, the remaining ingredients chop them chopsticks size.
Heat the wok, remember... we only want to work with high heat here. Add two table spoon of veggie oil, saute the SPAM, add black pepper and white pepper; set aside.
Drop in the 'meat' part of your ingredients first into the wok in the order of whichever needs more cooking time (red meat, Chinese sausage, hotdog, seafood), next in goes the garlic & onion, keep stirring the wok (or work the wok) add black pepper, white pepper and sea salt (we'll keep adding these three ingredients throughout the cooking... so add them a little bit at a time); make room for the eggs, drop both eggs, leave them for 30 seconds then scramble them; keep stirring, next in goes the rice (1 cup of cooked rice); add black pepper, white pepper and sea salt, keep stirring (never stop stirring or working the wok); next add the soy sauce, sweet soy sauce and a bit of fish sauce & sambal oelek / hot sauce; keep stirring, mix them well; next add the green onion, string beans, banana pepper, tomato, cabbage and bean sprout; keep stirring for another minute or so... done! Serve it on a plate cucumber as garnish and just add SPAM. I had just finished eating prior to posting this... yum... this one rivals house special fried rice in any Hong Kong restaurants. :)
