Oh, yeah. You would love it. AKPiper has made it, too. It's way easy. You just add citric acid to a gallon of milk, heat it to 88F, add a smidge of vegetable rennet, let it continue to heat to 105, then take it off the heat and let it sit for 5-10 minutes. Then you scoop out the curds from the whey, and squish 'em around in your hands, intermittently heating them as you knead. You start out with a wet mess that looks like thick Ricotta, and before you know it (like 5 minutes), you have this. I'm gonna try the Ricotta this weekend.
