This was a "I don't feel like cooking" dinner that came out really well.
While at the Farmers Market, I saw some of the most gorgeous looking broccoli, and picked some of that up.
Once home, I chopped it and steamed it. While I was doing that, I cooked some rice. What I didn't know was what sort of sauce to put over it, and I really didn't feel like making one from scratch.
Then I remembered some left over vegetable lentil soup that was in the refrig, and I used that for a topping!!
Super tasty, and a perfect compliment to the broccoli and rice!
