When I want the ultimate comfort brunch, I make myself some peanut butter & banana pancakes. It reminds me of stumbling blearily to the college cafeteria in the morning and fueling up for another long day of reading, writing and fighting to stay awake during classes.
Granted, I now make myself a much better class of peanut butter & banana pancake than I ever did get from the cafeteria.
Ingredients: organic unbleached white flour, free range eggs, organic New Zealand butter, sea salt, 100% Nutz natural peanut butter (made in New Zealand), organic bananas and 100% pure maple syrup.
The eggs are separated and whipped before recombining and adding to the flour, salt and butter. This makes for a nice, fluffy griddle cake.
