Red bell pepper (paprika)
Steamed or boiled asparagus
Crab meat with mayo
Tuna with umeboshi (pickled plum)
Thin egg strips
Sliced avocado
Ham

Cut up veggies and other toppings (see notes). I'm a vegetarian so only had some non-veggie choices for guests, but you can of course use fresh fish (sashimi) or anything you feel like.
