Diaper Bag Peek
For the Offbeat Mama pool!
1. This handy snap-in pouch came with my bag. It's the perfect size for holding a few diapers and a pack of wipes. I love that I can snap it out to take with me to the changing table, instead of bringing the whole bag! Sometimes, I just throw it in the basket of the stroller if I'm just running an errand in the neighborhood.
2. We use Costco diapers and Costco wipes. Nothing special but the wipes are great!
3. Changing pad that came with the SkipHop diaper bag that I used when Alice was first born.
4. Extra clothes-- onsie, pair of leggings and in the winter, a pair of baby legs in case Alice needs another layer under her pants.
5. Tube of Aquaphor. We use it for everything--chapped cheeks, chapped lips, red tush, dry hands.
6. We usually have a rotation of small toys in the bag, one or two. This one is our most recent-- a gift from my sister who went to the DR and bought back a little wooden duckie for Alice. So cute!
7. Snack cup. It's usually filled with Annie's bunny grahams, bunny snack mix or a mixture of cheerios, raisins and nuts.
8. Sippie cup of water. Alice doesn't drink juice and she doesn't like milk too much so it's always water in the cup.
9. Stella McCartney LeSportsac Everyday Bag. It's not a diaper bag but it worked out perfectly as one! It holds all of Alice's stuff, plus mine, which is my wallet, my own water bottle, a piece of fruit, and whatever else I need to have with me. I couldn't find a good link online for the bag since it's no longer being made or sold. I got a deal on it from Gilt Groupe!

leek, bacon and pea risotto
The recipe isn't available online but it's your standard risotto recipe. The EF recipe called for regular bacon; I used local pancetta instead. I also scooped out the pancetta after it got crispy, before making the rest of the risotto-- I wanted the bacon to stay crispy, so I added it back in at the end of cooking. (Make sure you use a slotted spoon for removing the bacon; you want the rendered fat for cooking the leeks and the rice.)
I do not subscribe to the school of thought that requires standing over the pot, and stirring the rice constantly. I think it's enough to stir it every once in awhile, after adding each batch of liquid.
