    It's usually cool or roomtemp. Made mostly of fermented cabbage and spices. There are extensive details here [wikipedia.org]. There are even kimchi museums.

      There's also an annual Kimchi Festival in Gwangju. I went, it was nothing special.

      I love the taste of kimchi. T'was very queer for first time that I ate it. But I enjoyed it. If this picture can be made to a real one and served in my dinning table, I will be the first to eat it greedily. ^^
