Vegan Extremely Lemony Cupcakes
My daughter is entering a cupcake competition at her school. We always use a vegan recipe since she had food allergies as an infant and although she's now outgrown those intolerance, we still use the recipe because it's that awesome. Shorty wanted to make lemon cupcakes, but our first batch she proclaimed "not lemony enough. double the lemon!" This batch she proclaimed perfection while my husband grasped his neck hissing "My glands! ack! Lemon! Tart!" and then grabbed another cupcake and left the room.
If you like your lemon cupcakes to actually taste of lemon then you'll love this recipe variation created by my daughter. I love it too, it's bold and delicious. Not your average prissy cupcake.
