And the winner is...J and B with the Cookie Dough Cupcakes.
Two teams had a bake-off today for Genius Hour. There were two exceptional entries, but it would have been really hard to beat these cupcakes.
Here is the recipe:
1-1/2 cups all-purpose flour
1/4 t. baking soda
1/4 t. salt
1/2 c. butter, softened
1/4 c. white sugar
1/2 c. brown sugar
2 t. vanilla
1 cup miniature semisweet chocolate chips
1 box yellow cake mix
1-1/3 c. water
1/3 c. canola oil
Cookie Dough directions
Whisk together the dry ingredients and set aside. Beat the butter and sugars with an electric mixer until smooth. Add 1 egg and vanilla and beat until smooth. Mix in the flour mixture until just blended. Fold in the chocolate chips. For the dough into tablespoon-sized balls. Place onto a baking sheet, and freeze until solid, about 2 hours.
Preheat oven to 350°F (175°C). Line 24 muffin cups with paper liners.
Beat 3 eggs in a large bowl with an electric mixer to break up. Add the cake mix, water, and canola oil. Continue beating for two minutes on medium speed. Spoon into the prepared cupcake liners, filling each 2/3 full. Place a frozen cookie dough ball on the top center of each cupcake.
Bake in preheated oven until a toothpick inserted into the cake portion comes clean, about 20 minutes. (Don't test the cookie dough ball.) Cool in the pan a few minutes before removing to cool completely on a wire rack.
