Inspired by Maki's recipe for spicy radish greens furikake, and the onigiri she made, I went out early and harvested a big bunch of the greens and made the furikake (after a marathon dish-washing session while suffering TERRIBLY from our current humidity [whine]), and I also made the quick-pickled radishes (both on justbento.com), and then I grilled some sausage.

I made the onigiri from a batch of zakkokumai which I mixed from scratch: 1 cup brown rice, 1/3 cup white japonica rice, 1/2 cup mixed azuki & mung beans, and 1/4 cup Kashi brand pilaf mix. which contains buckwheat, triticale, rye, hard red winter wheat, barley, oats, long grain brown rice, and sesame seeds. And then I added the spicy radish furikake, mixed it up, and made the rice balls. I nestled the onigiri in large yummy green shiso leaves from my garden. I made two bentos, rather hastily packed, and took a blurry photo to boot :-) Super yummy dinner with Br. John.

i LOVE mixed rice / zakkokumai !!
I also make mixes myself, and love the Kashi pilaf.... in addition to its health benefits, it adds texture to the rice, and makes your onigiri look fantastic! The addition of radish furikake makes this modest rice ball a complete meal in itself... simply beautiful :)

You get the cold weather in winter and the summer humidity??? Is that fair?And having your hands in a bowl of hot water in stuffy weather - no good either. I remember hiking with my parents in the Adirondike mountains as a child in terrific humidity and getting bitten on the neck by little bitey blood sucking flies. Is that near where you live? (Did love the hike though).

This is a zakkokumai dream come true and bursting with every good grain - I imagine the japonica and brown rice hold everything together! It's great to see the radish furikake too - I think I was seeing it as a sort of pickle but beautiful incorporated into the onigiri! Don't let me even start on the bratwurst!!

Hi Sherimiya!! I'm also now a big fan of the zakkokumai --I'd wanted to make some for ages, but got distracted, and somehow didn't make any sort of rice in forever. I saw the Kashi tip in the comments to Maki's post over on JB, and it seemed like a great idea. I also really liked the crunchy-nibbly goodness of the millet and flaxseed.

Heya B :-) Well, yeah, it's pretty AWFUL, huh? Seriously, with good fans in place, and access to a good swimming pond, it's pretty manageable. And our colourful autumn is worth it all :-)

It all did hold together nicely, in fact, but it was, naturally, a bit more crumbly than a regular white japonica onigiri. Next time, I think I'll used salted/preserved/blanched shiso leaves instead. I think they'll hold moisture in nicely, and maybe make them a bit less crumbly. I'll report back!

Hello and thanks, pii_bii! It really was yummy, and for my health, it's better to have less starchy-carb foods, so these nutty & whole-grain-y onigiri work real well. I'm going to make a big batch of the various grains and seeds, and then I can just measure out a cup at a time to make a few onigiri. I'm so So SO glad that the clever person with the Kashi idea posted a comment over at JB!

Tonight I have my friend K visiting, and we've watched tennis all day, and soon I'll make marinated shrimp on skewers and some brown basmati rice.. and some fiddleheads!
