Fresh Strawberry Pie
2 pounds quality, fresh strawberries
1 cup granulated sugar
3 tablespoons cornstarch
1/2 cup water
2 tablespoons butter
couple of drops of red food coloring
1 baked 9 inch pie shell
Prick the surface of the pie crust to avoid bubbles. Bake 8-12 minutes, until golden brown.
Wash & hull strawberries. Do not allow to sit in water or pie will be runny. Mash enough strawberries to make about a cup of pulp.
Combine cornstarch, crushed strawberries, sugar & water in sauce pan. Stir well & cook over medium until the mixture begins to boil, stirring often. Cook two more minutes or until sauce becomes thick & translucent. Stir in butter & food coloring. Set aside to cool.
Fill cooled pie shell with strawberries. Unless very small, cut into chunks. Pour cooled glaze over berries. Chill pie for 3-4 hours.
