Stir-fried Squid

Stir-fried Squid

Stir-fried in olive oil.

So buttery-tasting. So delicious! I can't believe people usually consign squid to being caked in batter and deep-fried.

If you're unfamiliar with this sort of squid prep the white bits up front are the body/mantle. I open the mantle up and cut into two pieces then scored the inside with a diamond pattern. When they hit the hot pan they curl up into these cute little shapes.
