one baked chicken carcass, meat removed
celery stick, chopped
carrot chopped
several bay leaves
one onion, root-end removed, skin left on, quartered
a scant handful of peppercorns
a bunch of garlic cloves, crushed, with skin.

cover with water, simmer (gentle bubbling) until reduced to about 1l or less. cool. strain.
