Notes.app without Marker Felt by Michell Zappa.
Switch on the Japanese (Kana) keyboard in Settings, type something in Notes.app. Read kur0mu's explanation in the comments

Actually, it does work, kind of. You need to click on the little globe symbol left of the space bar until the space bar reads ”スペース” (Which is Japanese Kana for Space).

At this point, you will have the helvetica font, but be careful as if you make any of the core syllables in this font, it will first attempt to type it out in hiragana.

You can opt to hit the little globe one more time, which will bring up a differently laid out 5x4 keyboard with hiragana on it. Click on the 'ABC' button and you will be presented with the something similar to a cell phone-style layout with ABC, DEF, etc clumped together. This will not auto-format to gana.

Lastly, if you do type something in with either of the JP input keyboards then switch back to the US English keyboard, anything you type following will be in Helvetica.

@kur0mu: thanks a *lot* for the detailed feedback. I must have lucked out, as I typed only a few kana characters and the note switched to Helvetica for me.

I do hope it works for more people however.
