I bit the bullet and updated my iPhone firmware to 1.1.3 today. Luckily, it all worked out: it's still a phone that works with Rogers, and I've got my own icons back on there (including the new iTunes icon I did this past week.)
Technical details:
Before I updated I was running firmware v1.1.1, with unlocked baseband 4.01.13_G. Since I bought my phone back in August, that means I was still on bootloader 3.9.
Starting with an activated, jailbroken & unlocked phone (without removing the hacks, essentially), I followed these instructions to a T (except I used ZiPhone 2.4, and stopped after Step E), and it all worked. Even the new map locator works as expected.
I did have to re-install the "non-legit" third party apps, but I didn't have to re-sync all my music and photos over; since iTunes handled the phone update, it was all there waiting for me. Nice. A far cry from the past "Option + Restore" update methods.
(None of the screenshot tools I'm aware of work with 1.1.3 yet however, so you get a photo instead of a direct screenshot)

I'm still on 1.1.2, but keep thinking I'm probably safe to upgrade. Just need the time to do it... Of course this would probably all be easier had my old iPhone (same as yours) not died leaving me feeling more uneasy about upgrades due to the newer bootloader/StealthSim unlock.

The screenshot tools sort of still work, they just don't end drop the shots in the photo album for the camera....this appears to be due to some of the changes in the user permissions in 1.1.3. You can SSH to the folder and grab the shot....can't remember the exact path but it's no longer root.
That's a cool case too.

Yep, I figured permissions would be the issue, so I tried Dock's screenshot and looked in both mobile and root user's home directories. No luck.
ScreenShot wouldn't even give me floating buttons. What are you using?

@wishingline - I believe you can upgrade to 1.1.3, jailbreak it without doing the unlock, and hopefully your StealthSim would keep working, but I'm not sure about that; Google might know.
Just be aware that ZiPhone needs to downgrade your bootloader to 3.9 to software unlock it; that's probably where I'd draw the line, personally.
Screwing around with the firmware and baseband versions is reversible. I got myself into real trouble going from 1.0.2 -> 1.1.1, but managed to fix it up by flashing the BB from a terminal window. But hacking the bootloader makes me nervous. I get the sense no one has found a way to fix that yet, if it gets screwed it up.
(actually, I just remembered, when I used iTunes to update, it didn't force re-activation; so provided StealthSim actually works on the newer baseband, it might even be as easy as pressing a button in iTunes. But, again, spend some time Googling before doing anything to save yourself the headache)

I used Dock/Screenshot which dumps 'foo0.png' into /public/var/tmp. It doesn't seem to work where it saves sequential shots like before. Every screenshot just overwrites the last one.
Screenshot didn't give me the floating button until I rebooted the iPhone and reinstalled it.

I own a 1.1.2 OTB and decided to use iJailbreak some time ago for the whole upgrade thing. Everything still works. Better yet, I no longer need a SIM hack...It really turns the whole jailbreak thing into a one-click matter. I already went "the hard way" to jailbreak my iPhone so I'm glad there are people coming up with tricks like these.
Your Chalkwork theme looks just fantastic. I've tried many good themes but yours make them all look amateurish in comparison. That extra icon polish and craftsmanship really shows through. Needless to say I'll be keeping this theme for a while. Great job.
