Coconut layer cake - layers of lightly coconut flavored sponge cake soaked with rum syrup, frosted with coconut buttercream and finished with toasted coconut.
I made this cake for J's birthday last month...and then made it again twice more in the same week for 2 other events. It's that good.
If I were making my own wedding cake, it would be this cake.
