Dear God I would never try to make a sandwich from canned fish. The only real use for canned fish is for a gumbo or curry.

I make pretty good tuna salad sandwiches from canned tuna. Mix with liberal amounts of mayonnaise, chopped dill pickles, and pickle juice (it cuts the fishy-ness of the tuna), salt and pepper to taste.

That salmon is nasty...Bodhi was right in rejecting it.

oh yuck! i've made a salmon ball that is quite tasty (salmon, cream cheese, smoke extract, and some other stuff) but it is time consuming. those little spine bones are tricky.
