lemon bar cupcake

Created by yours truly. They're pretty delicious, if I do say so myself. Lemon bar crust on the bottom, yellow cake hollowed out and filled with lemon curd, topped with lemon cream cheese icing and candied lemon zest.

Wow, that's so cute too! Sounds yummy. I really love those cups, but I can never get my stupid cake to come out to eat it without wrecking the whole thing. Do you have a trick or do you use a fork? chefmommy: They're just those fruit & nut cups (Wilton makes them). I'm not positive what size they are in ounces, but just look for those. Also, it was so worth it to make the zest and so much more special!

natalie: I think I didn't have trouble getting them out because there is lemon bar crust on the bottom. The sides didn't stick any more than with your average cupcake liner.

I had the same question too about the liners. I tried making cupcakes in those cups once and everyone who had one had a tough time getting the cupcake out unless you ripped the cup down one side. Is that how you're supposed to do it? If so, it's not an easy peel like the regular liners.
