Back in the day when my dad worked for Ford, there was an older gentleman named Mr. Rojas who worked with him, and every summer he'd send my dad home with two or three gallon-sized jars of his pickled jalapenos, with carrots and cauliflower florets in the mix. My dad and brother would make quick work of the peppers, but the other veggies were my favorite.

I like the carrots best, too, but I have a few recipes that call for the pickled jalapeños as an ingredient... and Cameron loves to munch on them!
