The other day my wife came home with a new cook book - "Lighten Up" by Jill Dupleix. Initially I was rather sceptic, but it turns out that this is not just an other faddy diet book, but simply comes up with ideas to make good, satisfying food just a little more healthy.
This recipe is extremely simple. You toast some sourdough bread (which incidently I bake every week) and fry two eggs over a low heat covered for 4 minutes. In the meantime pound dried porcini and/or shiitake mushrooms (I went for the "and" option) together with some salt.
Finally serve the eggs on the sourdough bread dusted with the salt/mushroom powder.

So, who is driving up the "Long Walk" at 7:30 on Sunday morning??? Is it a Ranger? Is it one of the Princes? Is it the Queen? Well, the royal standard is not set, so it looks like the Queen is not in - therefore I assume it's a Ranger, but I loved the intrigue...

Copper Horse

Copper Horse

Well, I have finally done it and am suitably proud of my self ;-) I got up at 6am today (Sunday) to go to the "Deer Park" in "Windsor Great Park" so that I can take some of these beautiful pictures of deer during sunrise... Problem was that nobody told the deer of our date and I din't see any. So instead I snapped at the beautiful scenery and re-did my earlier shot of the Copper Horse by Richard Westmacott. The light was spectacular and somehow the purple hue is just not really reflected enough. The statue is a homage of King George IV to his father King George III. Unfortunately George the IV died before the statue was finished in 1831.

Last one in this series. I think this one came out best. Basically we have been planting the hyacinths this year in these glasses mainly to show the kids how nature works, but I think they are also very pretty.
