Many people say that bacon is what breaks most vegetarians. I'd definitely agree that bacon was a temptress to me. Some of my vegetarian friends go as far as to say that bacon isn't really meat, but rather, candy. They'll say, "I'm vegetarian except for bacon," acknowledging their hypocrisy with pride. This dish from Incanto in Noe Valley takes a different approach to bacon. Instead of being sliced, like you would normally see it at the grocery store, this bacon was cooked unsliced, and then mixed with a hearty red sauce and placed on a bed of creamy cannellini beans. So ridiculously good. As someone who has been to Tuscany recently, I must admit that the dishes at Incanto are as good as some of the places I ate in Italy.
