Preparing Vegetable Stock
Store-bought vegetable stock/broth has nothing on the homemade kind. You basically clean out your veggie drawer and through everything into a big pot. I've got beets (+greens), kale, carrots, celery, turnip, parsnip, shiitake, butternut squash, daikon, wakame, garlic, onion, leek, and cilantro in here. And it is AWESOME. My favorite "recipe" (more like guidelines) comes from Mark Hyman's book - you can find the copy of it about halfway down the pagehere
