Tomorrow I'm going grocery shopping because I'm out of essential paper products so tonight everything in the fridge wound up in a pot.
I'm calling it pseudo curry because a packet of this Madras Curry Sauce got in there.
What's also in there:
Aidell's (gluten free) Chicken Apple Sausage
Smoked Applewood Bacon lardons (this is actually chopped bits of strip bacon. Lardon sounds so chef like though doesn't it?)
Fresh chopped fennel
Fresh chopped Granny Smith Apple
Fresh chopped elephant garlic
Zest & juice of a Meyer lemon
Fresh chopped scallions
Fresh chopped butternut squash
Fresh chopped Savoy cabbage
A few fresh chopped sweet cherry tomatoes
Ginger - I used a healthy squirt of the stuff that comes in a tube.
A tablespoon of Demera sugar
1/2 can of coconut milk
2 cups of mixed chicken/veg stock
Other spices. (medium curry, chili powder, smoked paprika, kosher salt, ground pepper, Worcestershire sauce)
1 can each Fava and Cannelloni beans
a big splash of Cab
Insane. Huge. Hopefully, tasty. I'll be eating it for awhile unless it has to be pitched in the trash. Right now it's on a long slow simmer. I'm blinding you with (cooking) science.
