[第一次就上手烹飪教室] 肉桂香蜜蘋果

天冷了,又到蘋果的產季囉。寒冷的冬夜該吃點什麼暖暖心呢?既然是蘋果產季當然來道滿滿蘋果風味的「肉桂香蜜蘋果」當甜點囉!這道甜點做法非常簡單,即便是第一次嘗試的小朋友(請由成人陪同)也能輕鬆成功。就連自認廚藝不精、笨手笨腳的廚務白痴,甚至是僅有電磁爐/卡式瓦斯爐等陽春器材的租屋族也能輕鬆成功喔!

1.兩顆小蘋果去皮、蒂與核,切小丁泡鹽水*瀝乾備用。
2.乾鍋小火炒奶油(約2x2x1cm)至略焦後放入蘋果丁拌炒。
3.狂灑三包小包裝冰糖粉**拌炒至蘋果丁色呈焦黃味飄香。
4.灑肉桂粉拌炒均勻後放米酒蓋過蘋果***。
5.蓋鍋悶燒10-15分翻攪拌勻再悶至蘋果呈透亮光澤感****
6.待酒嗆味消除後收汁起鍋*****。

* 泡鹽水蘋果才不會臉黑黑。
** 太早灑糖粉等到蘋果一丟糖漿就硬掉囉。
*** 其實應該放萊姆酒或白葡萄酒,不過因為家裡只有米酒就……。(不怕酸可滴點檸檬汁煮出來的蜜蘋果會很清香喔!)
**** 不蓋鍋蓋可維持爽脆口感,蓋鍋悶煮可製造綿密鬆軟口感。
***** 湯汁收乾呈盤時如果有新鮮薄荷葉可以一起放,又漂亮又增香。
