Tangy Tomato Soup![]() ![]() 2 tins chopped tomatoes,
6 large carrots, 2 big onions, 1 courgette, (zucchini) 2 veggie stock cubes (oxo) dissolved in 1 litre of boiling water, good shake of paprika, salt and pepper to taste, chop all the veggies and place them in a pan with the tinned tomatoes and stock. Bring to the boil and simmer for 30 minutes. Let cool slightly and blitz with a blender. Serve immediately, or eat some and save some in the fridge for later. :-) Suitable for vegetarians Great for diets! Commentsjazz&catlover
