Handmade chocolate cupcakes filled with blueberry cream and topped with dark chocolate ganache and some more of these absolutely delicious wild blueberries

    I can't believe how popular this photo has become... Thank you everyone for taking time to visit, comments and faves.

    My first attempt at cupcakes!

    Ok this was pure improvisation, I just can't follow a recipe, but I'll try my best to describe how I made them for those of you who asked!

    Cake:
    Sift together: 1 cup of pastry flour (the one with baking soda and salt already in), 1/4 cup of cocoa.
    With a mixer, mix 3 eggs till homogeneous. Add 1 cup of sugar and mix about 5 minutes, until the sugar has dissolved. Add ~45ml of water, then the dry ingredients.
    (I use homemade Tahitian vanilla sugar, tastes so good!)

    Pour in muffin pan, 3/4 to the top. Cook at about 375 for about 20-25 min, or until a toothpick comes out clean.

    I used a silicon muffin pan, which doesn't stick, so I didn't put paper cup.
    Allow to cool before filling.

    Cut off the top in angle, to be able to put in more filling.

    Filling:
    Whip 35% cream, some pure vanilla extract, and a bit of sugar (don't make it too sweet!) till it becomes pretty firm. Spread some in this in the bottom part, add a big handful of blueberries (or whatever you like!), spread some more cream on the top part then assemble together.

    Top icing:
    Dark chocolate (I used Callebaut 70%)
    35% cream
    (1/3 cream for 2/3 chocolate)
    Heat the cream until it boils softly. Add the chopped chocolate and stir until melted. Spread this ganache on top of the cake, and before it cools add some blueberries (or whatever you like). Decorate with fresh mint leaves (in my case, from my balcony! ), and chill till it's time to indulge !
