Double Chocolate Cheesecake by [Christine].

I really don't enjoy baking, but every now and then I really want a decadent dessert. So, I suck it up, get out my stand mixer and my measuring spoons and bake something tasty.

I found this highly-rated recipe for Double-Chocolate Cheesecake in an old issue of Bon Appétit -- and I had to go for it. Can I just say - BEST CHOCOLATE CHEESECAKE EVER!

My husband and I had some last night for dessert... but brought most of the cake in to share with our co-workers. Sharing it keeps me out of trouble. :-)

Kind of a cross between fudge and brownies...very rich!!! 1) 2lbs semi sweet chocolate+1/2lb butter-melt...2) eq: 5 eggs whole or 1 cup liquid egg+2TBSP sugar, whisk over double boiler till 4x's volume careful not to let lil scrambled egg pieces develop, don't over cook, wisk fast...add at last moment 2 TBSP flower, wisk..3) fold in 1/4 egg mixture to melted chocolate to temp...4) fold in the chocolate to the remaining egg mixture...poor into spring form or any pan, spray with non stick first, bake at 350 for 15 minutes, chill several hrs till set. Try shaved white chocolate to cover and drizzle with what ever fruity tootie sauce you prefer, ex: macerated Raspberries, store bought pie filling for ease or top with Mandarin Orange, Strawberries to garnish, whateva ;)
