Homemade Pepperoni Pizza

Homemade Pepperoni Pizza by [Christine].
One of my Flickr contacts asked me once, "Don't you ever just eat pizza?" Well... here's your answer. :)

I make my own pizza crust with my bread machine - you can also make it by hand or with the dough hook on a stand mixer. I think it's much tastier than delivery pizza - the crust is light and crisp and a little sweet.

Here's what I use...
1 cup + 2 tablespoons warm water
3 cups flour
2 tablespoons extra virgin olive oil
2 teaspoons Italian seasoning
2 tablespoons grated Parmesan cheese
2 teaspoons sugar
1 teaspoon salt
2.5 teaspoons yeast

The dough recipe makes two pizza crusts. I usually bake the crusts without toppings first - for about 10 minutes at 375 degrees. (brushed with olive oil)

Then, I top them with whatever I'm in the mood for and bake until everything is melty and the crust is golden brown.

The husband and I were in the mood for traditional pepperoni this weekend!

Actually... yes, the pugs all get a little sample! You should see them "power-begging" when I make pizza. (they are also huge fans of Chinese food)

Okay so I have a question... I love your food shots. Delicious. They are wonderful and always make me hungry. My question is about how you manage inside light. I don't think you use a flash when you take your pictures. How do you get such great, crisp, natural light kind of photos...

@Really Turning Japanese -- You're correct, I don't use a flash, but I do shoot everything RAW. That way, if I shoot the food with natural light coming through the window, I can make really slight tweaks to the white balance to make it look natural. If it's dark outside and I have to shoot with the incandescent light in my kitchen, I can set the white balance to tungsten and tweak from there.

@jbaugher -- I used partially homemade sauce this time. (I used some marinara sauce I had and jazzed it up with garlic, oregano, crushed red pepper and olive oil)
