Cauliflower with chipotle salsa and goat cheese. Seriously, it was in one of my Mexican cookbooks! Though with feta - I thought goat cheese was probably more authentic.

Black beans & rice

Mangoes and plantains with butter, rum, cinnamon & coconut

Sweet potatoes with orange juice, spring onion and red pepper

Yum!
