I have been baking a lot with meringue lately. Made a banana cream and coconut cream pies with meringue toppings, and today some mini lemon meringue Pielettes. On these pielettes I decided to give Italian meringue a try instead of French meringue and let me say I am glad I did. Italian meringue is so much more creamier and smooth. While it takes longer to make, it is certainly worth it.
