The Infamous Snail Porridge

    This shows it a bit clearer. The base is the 'porridge' - but really it's an oat-based risotto. The Snails sit on that and for the first time in my life were tender not rubbery. And on the top is excruciatingly finely chopped fennel. A beautiful combination.
