Vanilla Beans

Vanilla Beans by kendiala.
I needed a photo of vanilla beans for a client's Web site, so I pulled out my precious jar of beans. They aren't very easy to photograph.

I use them mainly for sweets. To add it to a recipe, slice a bean in half lengthwise. Then run your knife down the inside of the bean, scraping out the pulp. Add the pulp and the scraped bean to the liquid in your recipe and let it steep for about 15 minutes to bring out the flavor.

After steeping, leave in the pulp, but you can take the scraped bean part out, rinse it, dry it, and put it into your sugar bowl. Left to blend together for a while, you get a heavenly smelling vanilla sugar.

I recently made a black bean and sausage chili that had vanilla bean in it. That was incredible. The vanilla added so much depth to the flavor. The recipe is in the Jan/Feb 2006 issue of Cooking Light magazine.

Right now I have a bunch of them steeping in everclear to make my own extract. Once they've soaked for about a month, I'll strain them out & warm in some jojoba oil to make an infusion (apparently the alcohol works as a solvent to release the scent, and the heat causes the alcohol to evaporate off so it won't dry your skin out) Hope it works...

That fresh vanilla scent just can't be beat :)

Good luck with the infused oil. If it doesn't work, check out www.sunrosearomatics.com . They have a vanilla-infused oil that's to die for, and it's not very expensive at all. It's a great substitute for the very pricey vanilla absolute.
