(Based on the recipe I used for the Homemade Potato Wedges) 4 small yams 2 tablespoons olive oil 1 tablespoon butter, melted 1/2 teaspoon coarse salt 3 teaspoons dried rosemary (fresh would probably be better but I don't know how much you would add) Preheat oven to 410F. Line a baking sheet with aluminum foil, shiny side up. This makes clean-up very easy. Cut the yams lengthwise into wedge-y eighths. Toss the wedges with the olive oil, butter, salt, and rosemary. Place the wedges on the baking sheet in one layer. Bake for 25 minutes. Take out the baking sheet, rotate and turn the wedges, and return the baking sheet to the oven. Bake for another 30 minutes or so. If the edges of the wedges have shrivelled and blackened a bit and some sugar from the yams has seeped out and caramelised, the fries are ready. Very delicious!
