Thats the magic right? :)

The image has to be really bright. So I don't know if they use epaper or a really really bright projective system (with adjustment when there are people on top) or some other system.

Just wait for it. These real cool screens are coming in a few years. Bill Buxton, Principal Researcher Microsoft Research, ( www.billbuxton.com/ ) a person that I admire very much, has seen these cutting edge technologies and prototypes. And these screens are going to get CHEAP!

Trust me, I think it is going to be fun.
