Lime Chicken Soft Tacos
You can tell by my stream things here haven't been all that exciting! All I seem to be posting lately is pictures of food and beer! Hahahaha.
Anyway....
Here we have some lime chicken tacos w/ homemade mango salsa in wheat tortillas.
Each bite had so much flavor it was ridiculous!
Started out by sautéing some chicken breast that I lightly seasoned and cut into small strips.
Meanwhile I mixed up come red wine vinegar, the juice from a lime, a dash of sugar, kosher salt, fresh ground black pepper, chopped green onion, chopped garlic and oregano.
When the chicken was all cooked, I added the above mixture to the pan and let it cook just a few minutes longer. Adjusting flavors as I saw fit.
When the chicken mixture was done, I spread out a small dollop of sour cream across a whole wheat tortilla. Next I topped with chicken mixture, homemade mango salsa, lettuce and some freshly shredded monterey jack cheese.
Added a few blue corn tortillas strips to the plate to scoop up any of the filling that fell to the plate.
Mmmmmmmm.

Veggie Pasta Toss
Whole wheat fusilli pasta, roma tomatoes, lemon basil, shredded zucchini and fresh grated parmesan cheese.
This was delicious! And super simple!
Cut the tomatoes in half and place on a baking sheet. Drizzle with a touch of olive oil then sprinkle with kosher salt, ground black pepper, chopped lemon basil and a small amount of fresh grated parmesan cheese. Bake for about 20mins or until good and bubbly.
While the tomatoes are baking, boil up the pasta.
While the pasta is doing it's thing, shred some zucchini.
Toss the cooked pasta with the zucchini then add some lemon juice, more chopped basil and a little of the parmesan cheese. Mix that all up.
When you plate the pasta throw a few of the baked tomatoes on top. As you mix everything up, the tomatoes begin to break apart and form their own "sauce".
Quite good!

Week 2: Happy 9-9-09!
I meant to get this uploaded yesterday, but alas I haven't found myself with any free time until now [and no I wasn't playing video games].
Seeing as it was 9-9-09, I found it only proper to celebrate with a Magic Hat #9!

1: Dogfish Head Punkin Ale
It's getting to be that time of year!
Instead of bidding the summer a sorrowful goodbye this past weekend, I decided to welcome the upcoming Fall season with open arms. What better way to do so than with my first pumpkin ale of the season.
Mmmmm tastes like Fall.
