I like the different layers here. Nice light and texture as well. I've been making my own paneer for a while now. I pour ice cold water in the pot soon after I take it off heat to stop it from further cooking. Keeps the paneer soft.

That's a great tip Aisha. Its true that if the paneer continues to heat once it splits, it gets rubbery, so I suggest taking it off stove immediately once the curdling happens. But your tip is even better! I should add that to my post :-)
