Always had sunday breakfast at Le Pain
Quotidien in Brussels when I lived there. But
they didn't have those clever bread
menu-holders :-)

I worked there years ago, and it is just
stale bread they switch out every few days.
Regarding waste, I would ride home with a
trash bag full of day-old pastries and bread
trying to give it away. Maybe one or two
people would take an item or two. At least
the menu holders weren't a total waste.
