Thanks! I'm not vegan either. It's just that our 16 month old son is allergic to dairy and eggs (and NUTS -- damn!) and I love to bake. So I'm trying out all kinds of vegan (and nut-less) recipes. These ones are verrrry good. Just the right amount of chew and the right amount of crust.

Thanks for letting me know, Gudlyf. That's a great article, too and I'm going to try out the lemon cake recipe. I'm not vegan either but our son is allergic to dairy, eggs and peanuts, so I'm doing a lot of (nut-free) baking. I'm currently contemplating what to make for his 3rd birthday and am thinking: twinkies. I have to decide on the cake and the filling still, but I think it might be the lemon cake with a vanilla buttercream filling. We'll see.
