Eatin' Weeds (Creasy Greens)
Dad found these out in my yard, so I fixed them for lunch.
Parboiled for 1 min in salted water. Shocked in ice water, drained as well as I could and dried with paper towels.
Meanwhile, sweated handful of onion in butter, added half a minced garlic clove after a min, then a min later added the greens. Tossed greens with mixture in pan for just a min.
Meanwhile, threw together a real quick dressing of vegetable oil, balsamic vinegar, dijon mustard, maple syrup, salt and pepper.
Tossed all together and plated.
Next time: add goat cheese, definitely bacon, maybe walnuts, maybe apples, maybe use walnut oil instead of vegetable oil, maybe mustard powder, maybe a cider vinegar. Thicker dressing.
