lunch: tofu Thai green curry w/brown rice![]() ![]() I went vegeterian today (just for today! not permanent..) and used tofu in my curry instead of chicken.. the brown rice was still cooking when I was taking this photo so its not pictured :) it turned out pretty good, but I think I still like red curries better. you're probably wondering what's with the sudden influx in FOOD pictures on this girl's photostream?!? its because I've been trying to cook my own meals as much as I can right now since I have the time finally! I love cooking and when school is in session, I'm running around, in and out of the house and barely even have time to eat. so microwave meals were the way the go :( but now even though I'm working a 9-5, I have a set lunch hour, and an entire evening to do whatever I want! puahaha.. so I've been trying to catch up on some much needed sleep, eating real meals, watching movies, taking photos, FLICKR-ing <3, and just relaxing during my downtime. I'm gonna miss all this when school starts again in 2 weeks :(
anyways, the recipe for my thai curry: ingredients: Azumaya extra firm tofu, about half a brick, cut into cubes broccoli (my favorite vegetable right now!), cut into florets half a red bell peper, cut into squares one carrot, sliced diagonally so they're slightly oval and looks pretty green onion Amoy Thai green curry paste Trader Joes low-sodium chicken broth red dried pepper flakes garlic powder low-sodium soy sauce brown rice (or white, whatever you'd like is fine) directions: In a pan, I first start heating up some oil and cook the tofu cubes until they start turning a little golden brown and add a little soysauce to flavor them. then I add in the carrots and broccoli (I always like to run it through boiling water to soften it up a little first), let it all cook for awhile and then add the red bell pepers in with my curry paste with some garlic powder. then I add in some chicken broth and water to get the "soupy-ness" of the curry. turn the heat up, cover the pan and let it boil and simmer a little. if it gets too dry, you can always add more chicken broth or water for more soup. add some black pepper and dry red pepper flakes if you like more heat (I know i do). serve and sprinkle on some green onions to garnish! and oh yeah, I'm sorry if I just use "some", "a little", etc.. to describe measurements. I learned to cook from my mom without ever using a measuring spoon so we kinda eyeball everything.. :) Commentsj_boogie
