for emily & you

for emily & you by hrsmithjones.
Mom's chocolate pie filling [pudding]
2 c. milk
1 c. sugar
cocoa to taste - I used 4 rounded T.
little bit flour - I used 1 round T. [could use more maybe]
1 egg
1 tsp. vanilla
1 T. butter
Heat milk, sugar, cocoa & flour; let bubble till thickens. take off heat. pour chocolate liquid into egg & whisk & pour back into saucepan. cook 2 minutes; take off heat. add butter & vanilla. chill.

Mom's pie crust recipe for one crust bottom
1 1/2 c. unbleached flour
1/2 c. butter
1/2 tsp. salt
3-4 T. water, add one T. at a time.
the less you knead the better, fridge dough while preparing filling. roll out thin. bake. add chocolate filling when crust has cooled. chill.

It's been so long since I made a chocolate pie I forgot I had a recipe for one! I don't see meringue; did you serve it with whipped cream?
