    It's Folklife Festival down here in San Antonio and I was lucky enough to serve as an official Food and Booth Judge during the opening ceremonies with my bud Allen Sikes. I got to spend 3 straight hours savouring and critiquing a world wide sampling of 14 staple foods and beverages from across the planet..
    First stop, Ireland! The Colum Kille Division, Ancient Order of Hibernians: Corned Beef Sandwich on Cracked Wheat Roll - Our first stop of the night and wow! This was the most amazingly tender and juicy Corn Beef sandwhich I've ever had! This was probably my 5th or 6th experience trying the always (to me anyway) mysterious corned beef sandwhich. In the past it's aways tasted like nothing more than a kind of unimaginative, boring and dry ham sandwhich. This thing was freaking incredible! Especially when washing it down with a couple of cold Harps brewskis! Not a bad way to start a Friday night. Only 13 more booths to go... Thanks again to Allen and all the other great volunteers!
