Hummingbird Cake with Dried Pineapple Flowers

      Oh wow, those pineapple flowers look great! I definitely have to try and make some.
      (Oh, the rest of the cake looks, and sounds, good too, although I don't like pecans, or any other nuts really. Maybe I could use almonds instead..)

      GK - They were a total accident and turned out to be the star of the cake. If you make them and put them on top of a cupcake, I would really love to see how cute they look :)

      And as far as nuts go...hmmm....I've never actually tried almonds and banana together so I can't say that it won't work well. Maybe try hazelnut if you like those. I don't think the nuts are obligatory so maybe leave them off and see if it works. :)

      cakebaker - :) Delighted you like them. I didn't put anything on the pineapple to make the centre white, they just dry like that. :)

      Wow these are AMAZIIIIIINNNNGG!! I can't praise you enough! But alas, I tried to make my own and failed. Mine were hideous compared to yours! They were brown, some more than others and I didn't have a cookie cutter...any suggestions as to what went wrong? I sliced them thinly, but mine were just not that color, how did you get yours to be such a gorgeous yellow?

      Hrm....no idea why they might have gone brown on you. I dried them really slowly though in a low-heat oven. It takes about a day. If you did that and they still turned brown, maybe try sprinkling lemon juice on them.
